Sunday dinner – cod fish and chorizo in tomato sauce and mixed brown rice

It’s been few weeks that I was focusing on cooking healthy food, this is the first week after a while that I try to cook something different, not saying that I am cooking some unhealthy food….. lol….. I will try to stay with healthy, but not vegetarian or vegan for this week.

I am thinking to cook a fish dish, instead of always cooking salmon, maybe cod fish is an option for tonight. I am going to do a tomato sauce with chorizo, onion and celery, then to serve it with mixed long grain brown rice. Still sounds healthy, right?

So, heat up the pan with some butter, and then put the minced garlic and diced onion into it, fry them until they start to caramelise. Then, add the chopped red chili pepper, chopped celery and diced chorizo, fry them a bit, and then add the diced tomatoes with some tomato puree as well if you want to have a stronger taste. Add some water and bring it to boil, season it with salt, pepper and some pripika. On the other hand, also season the cod fish with salt and pepper, then add the cod fish in and cover the lid, let it simmer for around 10-15 minutes and remember to flip the fish over in the middle of the way.  On the other hand, you should have get your rice ready, I am using rice cooker, so it’s easy and quick.

When the cod fishes are ready, serve them with rice and garnish it with some parsley.

My spicy version of Spaghetti Bolognese

I’m missing spaghetti bolognese, haven’t cooked that for quite some time, so would love to make it for tonight. Funny though my husband is also craving for this dish, he is happy that I am cooking this tonight!

I would like to make a spicy version tonight, both of us like how it tastes, a bit spicy! To cook the sauce, heat up the sauce pan with some olive oil, then add minced garlic. Add all the vegetables in, finely chopped onion, carrot, celery, and some red chilli pepper, cook them a bit, and then add the minced pork and beef. Cook it for a while, season it with thyme, oregano, salt and black pepper. Add some red wine and let it simmer for a while, then add plum tomatoes in. Let the sauce simmer and cook for around 15 to 20 minutes. Add water in between if you feel the sauce is too dry. Cook the spaghetti according to the package and mix them with the sauce when they are ready.

Serve the pasta with shredded parmesan cheese and a bit of basil. We love the spicy version and it tastes better than the non-spicy one.

Chili con Carne . can go with rice or bread


I was thinking what to cook for our usual Sunday dinner, my husband was trying to help and brain storm. Suddenly he came across “Chili con carne”, he said he can eat that for the entire week. I am not a fan of Mexican food at all, and I am not sure if I know exactly what Chili con carne is… Tried to search a bit online and look into few recipes, my husband also trying to explain to me how should that tastes like. All right, even I do not like Mexican and beans that much, let’s stay open-minded and try something new!

I found few different recipes, and I am going for the one with more vegetables to make it a bit more healthy, so I decided to base on the recipe from Jamie Oliver and improvise. Looking at the ingredients, somehow I feel that I am making the spicy Bolognese sauce, just with more beans.

There are a lot of chopping to do, so better get everything nicely chopped and ready before starting to cook. Of course you can make use of the food processor to help out a bit. Finely chop the onion, carrot, celery, garlic, and finally chop the red peppers into  medium squares. Get some coriander chopped and separate the stalks from the leaves. I also like to add some red chili to make the dish a bit more hot, just get them chopped and ready.

Are you ready? So, get the biggest sauce pan out, heat it up and put some butter into the pan. Put the minced garlic and the onion in the pan to start with, then add the carrot and celery together with a pinch of salt, let them cook a bit until they turn soft. You can add some olive oil if you feel there is not enough oil, then put the minced beef in and fry them nicely until they start to turn brown. Then, add the kidney beans and chickpeas, together with the coriander stalks and the red chili. Give them a good stir, add all the spice into the pan, chili powder, ground cumin, ground cinnamon and ground paprika, of course some salt and pepper, then add the chopped tomato sauce into the pan. Let them cook a bit, and then add some water into it, bring it to boil and then switch it to lower heat, let it boil for at least 30 minutes to one hour.

When it’s done, you can serve it with some long grain rice, by adding some yogurt and corindar as garnish. That’s how I like to eat, as I love rice. My husband prefers to have it with bread, so he had it with some baguette, French meets Mexian. Somehow I feel like having Indian food….? My husband said that has nothing to do with chili con carne, but at least it tasted good. He thinks the vegetable makes it so non-Mexican, he said he will cook me a real one later, let’s see… well, I kind of like it, at least it is not too beany and not too Mexican 😝

Long time no cook, Sunday dinner – Grilled mussel with penne pas7a


Long time no see is a Chinese idiom, so long time no cook……. I was away two weeks for business trip, I miss my cooking, of course can’t wait to cook something tonight!

I watched Jamie Oliver’s show the other time, and he was cooking this grilled mussels that go with tomato soup. I was thinking to cook that a while ago, but I guess today I want to do it, but instead of tomato soup, I will make it with pasta.

In order to grill the mussels and penne pasta at the same time, I tried to get both ready almost at the same time. Before cooking anything, it’s better to get everything chopped and ready. First of all, let’s prepare the breadcrumbs for grilling. Mix the breadcrumbs, some Parmesan cheese, basil, garlic, some olive oil and a pinch of salt in a food processor. So that’s ready for the grilling part later on. Now to chop everything, garlic, red chilli, onion, celery, tomatoes and coriander, and ready for cooking.

To boil a pot of hot water and cook the penne first, because the cooking time is around 11 minutes. On the other hand, heat up the sauce pan with butter, and put the minced garlic, then chopped onion, fry until the onion turn slightly brown, then add chopped celery and tomatoes and red chilli. When everything is kind of cooked, pour some white wine in, and then add some water or you can add chicken stock. I always think water is good enough already. Then, put the mussels in the sauce pan, and cook for 4 minutes with lid on, then cook it without lid for another 2 to 3 minutes. When all the mussels are opened up, that means all cooked.

Now put the cooked pasta in a bake tray, and pour some stock from the mussels in the tray and mix with the pasta. Then, remove one of the shell from the mussel and let it just sit on the other half of the shell and place it on top of the pasta in the tray to create a layer of mussel. You can let those onion, tomato and celery sit inside of the mussel. After putting all mussels on top of the pasta, then put the breadcrumbs on top of each mussels. And place the tray inside of the pre-heat oven under 190C for around 15 to 20 minutes, or until the breadcrumbs turn brown.

Happy Valen7ine’s Day everyone! Chicken soup for my sick Valentine.

Happy Valentine’s Day everyone! I really wish everyone having a great day! To me, Valentine’s Day is a bit too commercialise, all the retailers are pushing to sell more for valentine’s gift. A dozen of roses costed HKD2,380, something like USD300, way too much!  If today is about love, we should just love our love, do something nice together and enjoy the time being together.

Unfortunately, my husband is sick today, still sick. He has been sick for few days already, and he is really craving for chicken soup, he said that’s what he used to have all the time when he was sick back in Germany. The one he was showing me, is actually an instant soup with pasta, I am just thinking how good can a can soup be? Why don’t I cook a real chicken soup? By the way, it will be impossible to find that German can soup here in Hong Kong.

I found it funny that how westerners see chicken soup compare to Chinese. For us, if we catch a flu, Chinese doctor will tell us not to have chicken, and chicken soup for sure is not good. But for westerners, chicken soup is something that you should have when you catch a flu or having fever, because chicken soup can help you to boost your immune system. I really don’t understand why Westerners and Chinese have such a big difference towards chicken, my husband said maybe because we do have a lot of problem with chicken, such as bird flu, I am not sure if that is the reason.

So, the chicken soup with pasta ended up so tasty and my husband loves it. Hope he will feel better tomorrow. The ingredients of the chicken soup are: first of all, of course the chicken! I was struggling with getting the whole chicken or just using chicken pieces, so I ended up with the whole chicken just because I found this Danish chicken at the supermarket. It will be difficult if I have to cook the soup with the local Chinese chicken, as they are all so skinny and boney. Vegetables are also important for this soup, onion, celery and carrot, as well as leek; spices are also important, as that help you to open up your nose, black pepper, red pepper, cayenne pepper, cumin and allspice. You also need herbs: chopped rosemary and parsley, get some garlic, jalapeños and red chilli pepper as well.

Chop everything and get ready, I also remove the skin of the chicken, because I think it’s better. Make sure you have a pot is big enough, because with everything in will take up lots of space. Heat up the pot with olive oil, fry the onion, celery and carrot until they start to sweat, cut the whole chicken into four big pieces and place them in the pot. Put all the herbs and spices in the pot, except parsley and leek. Pour water inside the pot that covering all ingredients and let it boil, then switch to low heat and let it boil for 90 minutes. After one and a half hour, take out the chicken, and you need to debone the chicken. It will be super easy because the meat will become so tender and so easy to remove. The only thing is too hot! You can use two forks to get that done easily. At the same time, you can boil a pot of hot water and boil the shell pasta and get it ready. Place all chicken meat back into the soup, and put the leek and parsley. I guess now you can switch off the stove. About the pasta, you can do it in two ways, either you pour everything in the soup, but they will grow and become bigger and bigger later on; or you can leave them aside, only mix them with the soup when you eat them, so they don’t soak up all the soup. Serve the soup with a squeeze of lemon juice to add some freshness and vitamin C as well.

I am happy that my husband already feel a lot better after having the soup! Happy Valentine’s Day 😉

Mussels with whi7e wine sauce, super easy and easy to please!

Mussels are something nice to eat at the restaurant, and you might think it is difficult to make, which is totally wrong. It is super easy and you can easily achieve a good result. You can give a try, quick and easy, maybe a dish to finish in 20 minutes starting from chopping.

Let’s get all the ingredients chopped nicely, garlic, red chili pepper, onion, tomatoes, celery, parsley and spring onion. It’s up to you, as it all depends on what do you like to eat, feel free to explore, but main ingredients, I would say, they are onion, parsley and some garlic for sure.

Heat the sauce pan with some butter, then put onion and garlic, fry them until they start to turn brown. Then, add the celery and tomatoes, you can add the red chili pepper now, or if you want it more spicy, can add from the beginning together with the garlic. Then, you can put either chicken broth or just water to boil it, also add a bit of white wine. Personality, I think water is good enough and it also turned out tasty, even without chicken broth. Now, you get ready with  the pack of mussels that you bought from the supermarket or food market. I’ve tried different brands, and they are all good. The best thing is, they are just not expensive at all, you save a great deal than eating mussels at the restaurant. For the frozen mussels, you don’t need to defrost them, you just pour them in the sauce right after you took them out from the freezer. Then, cook it around 5 minutes with the lid until shell open, then maybe cook 1 more minute without the lid. Finally put parsley and spring onion, then serve it with some slices of baguette.

The best thing is to dip the baguette with the sauce. So yummy! One thing to remember, no need to put salt, because the mussels should be salty enough.
