Sunday dinner – chicken and avocado wrap


Tonight’s dinner definitely would love to stick with the theme of healthy, but would like to add meat into it. My husband was doing a lot of juicing and cut down the amount of meat by eating almost only plant based raw food. Tonight maybe good to go with chicken, but not beef, as we would really like to minimise having beef in our diet.

So I decided to cook something with chicken and avocado, they are a good mix in terms of pairing. Just thinking what should I make with the two, and I decided to make burittos with them. Instead of tortilla, I got this healthy oat wraps at the supermarket and they are super light which should be a better choice than tortilla.

To heat up the pan with a bit of olive oil, add minced garlic and diced onion into the pan, then add diced chicken into the pan when the onion started to turn brown. Stir fry everything until the chicken is done, set them aside and let them cool down a bit. Get the rest of the ingredients ready, halved the avocado, remove the stone and cut them in dices. I just found out the other day that you can keep the avocado with the seed in order to avoid it turning black. That’s a really good trick, instead of putting lemon juice in it, just simply let the seed stay with the avocado. 

Now, get the oat wraps out, you can use tortilla if you prefer to keep it original. Lay the chicken, diced avocado, diced mozzarella, a bit of sour cream and some chopped coriander carefully on the wrap. Then wrap it and roll it nicely, and place it on the grill pan to pan fry until it turned crispy. 

You can serve it just like that or with some salad, freshy and healthy!

Seafood Night – Fish, Prawn and Crab

This Sunday dinner, I am thinking to work on seafood. I’ve been thinking to do a dinner with Fish, Prawn / Shrimp and Crab (魚蝦蟹). I was thinking to work on my presentation, and do something closer to a fine dining approach. But then, I lost my enthusiasm totally, because I did not manage to defrost the pastry. By the time I need to work on the pastry, I have to come up with a solution quickly, so I decided to use the bread instead. Forget about fine dining presentation…

I started it off with the Prawn Rolled Toast, as I said, my original idea was to wrap them with pastry and bake it. I might try it out again later on, but let’s make it with bread for the time being. The pack of frozen prawn is with 9 pieces of prawn, let’s cook them first in a pan with a bit of water. Remove them from the pan when they are 80% done, and we will cook them through in the oven later on. Remove the shell but keep the tail part on,  devein the prawn and sit them aside and let them cool down. To use the bread to wrap, we have to use a roller to flatten the bread. Use half of a sandwich bread, and coat both side with butter. Lay Swiss cheese, cucumber strips and a piece of prawn on top of the bread, add some wasabi mayonnaise or just mayonnaise, and then roll up the bread and close it tight. Add a layer of egg wash on the surface, and place them in the oven to grill under 200C for 10 minutes.

I’ve used only 4 pieces of prawn for the toast, so I use the rest of them to add into the Crabmeat Salad. Chop the prawn into small dices and get a large salad bowl ready, chop the rest of the ingredients into dices and add them in the bowl. I am using cucumber, tomato, onion, avocado and crabmeat, mix everything well in the salad bowl. Then, add lemon juice, a touch of salt and plain yogurt into it, mix them well and adjust the taste. Keep them cold in the fringe to serve later with the tuna, or you can have them separately as long as they are cold enough to serve.

For the Seared Tuna, let’s work on the dressing first. Mix sesame oil, soy sauce, grated ginger, minced garlic, red chilli and lemon juice, taste it and adjust. I did not manage to get a thick piece of tuna steak here, what I’ve got is only 2 cm thick, but ideally we should work with something around 3 to 4 cm thick. For what I have, I could not have the tuna cooked in a way like cooked on the surface but still raw in the middle. What I’ve got was the entire tuna steak is cooked, because it is too thin. Cut the tuna steak into rectangle shape, coat the entire surface with sesame seeds. Heat up the pan with a mix of sesame oil and olive oil, fry some sliced garlic until golden brown and set them aside for later use. Fry the tuna each side around 15 seconds, you can see how much it’s been cooking on the section, and you can decide on how much you want that to be cooked. When the fish is done, slice them into thick pieces and serve with some mixed green salad together with the crabmeat salad.

Having snacks as appetiser for our home party

Last night we have some friends coming over for dinner, they are my uni friends, 5 adults and 3 teenagers, totally 10 of us. Originally we are thinking to have dinner outside, but I don’t want to break my Sunday cooking routine. That’s how we ended up with eating at at our place, so they can also have a taste of my cooking.

In order not to drive myself crazy, I planned to cook something that I’ve been cooking before, except one new dish from me and my husband also helps to cook this chicken wings. So, we ended up with 6 dishes, 2-way chicken wings, chicken sous vide Thai salad, prawn & avocado on toast, Thai pork ribs, grilled potatoes, and jalepanos with bacon wrap. I’m glad that they love everything, and here is the highlight of the two new dishes.

2-Way Chicken Wings, my husband did 2 version of chicken wings because some like it hot and some cannot eat spicy. For the spicy version, mix the breadcrumbs, plain flour, sesame seeds, a bit of salt and a lot of ceyanne pepper in a bowl. Dip the chicken wings in the egg wash, then dip them in the mix until the entire chicken wing is fully covered with the breadcrumbs mix. For the non-spicy version, mix soy sauce and honey in a bowl, marinate the chicken wings in the sauce. Place all chicken wings in the baking tray, and drizzle with olive oil. Grill the wings under 180C for 30 to 40 minutes, then brush honey on the honey version and sprinkle them with sesame seeds. Grill under 210C for 10 more minutes, and they will be ready for serving. 

Prawn and avocado on toast, I guess this should be good to replace prawn with tuna fish, crab meat or similar seafood as well. Cook the prawns on a pan with a bit of water, let them cool down. Cut the prawn in small cubes, place them in a bowl. Add cubed avocado, diced tomato, finely chopped spring onion, lemon juice, some mayonnaise and season it with ground paprika, salt and pepper. Mix everything well together, then serve them on a small toast. Add some ground paprika and parsley flakes as topping when you serve.

Sunday dinner snack night

Instead of having one big full meal, it’s good to have snacks to fill up your stomach on Sunday night. Checking out the page of Tasty on Facebook, and found a lot of snacks that I would like to try. I was thinking to make five of them, but I ended up with making only three, already feel full. Maybe I will try to make to other two tomorrow.

1. Jalapenos with cream cheese and bacon

This one is definitely worth to make it, as it is so easy but tasty! Jalapenos + cream cheese + bacon = in oven 220C for 15 minutes, that’s it!!! So Yummy!

2. Potato chips

They showed how to do potato wedges, but I ended up to make potato chips, and I’ve also improvised a bit. Cut potato in to strips or wedges, season them with olive oil, salt, ground paprika, rosemary and thyme. In oven 200C around 25 minutes, then add parmesan cheese and pepper, then grill 5 to 10 minutes.

3. Chicken nuggets with salad

They called it chicken popcorn, I feel a bit weird with the name as it sounds like chickenpox. I rather called it mini chicken nuggets. Cut chicken breast into cubes, and dip them into egg white, then fill the surface with breadcrumbs. They used Ritz crackers, but I think breadcrumbs will do the same job. I just add some salt because Ritz crackers are already salty, but not for breadcrumbs. Place them nicely on a bake tray in the oven under 220C for 12 to 15 minutes. Melt some butter, add chili powder and some lime juice, put it back in the oven and grill it for another 5 minutes.

 

I’ve also trying to make other snacks the day after, and I’ve done this avocado with prosciutto wrap, also very simple. Cut the avocado into wedges, wrap each piece with prosciutto, and then pan fry them. Serve them with some Romaine lettuce, parmesan cheese and a touch of lime juice.

Instead of salad, how about a pasta dish with Salmon and Avocado? Try this salmon fusilli pasta with avocado pesto

I was not meant to cook this for dinner last Sunday, but I found one pack of smoked salmon is going to be expired the next day, and the avocado is almost overripe. Let’s think of something to cook for the night with salmon and avocado. So, besides making a salad with salmon and avocado, what else can I do? How about making a pasta dish…… Why not?

The thing about avocado is, it will turn into brown colour after exposing to air. So, try to use the right amount for this dish and finish it up in one go. If you have leftover, you will ended up eating a brown colour pasta the next day. You would not get sick, it’s just not looking pretty. I’ve heard that if you put a cut onion next to an avocado, will help the avocado to keep green. Not sure if that works if I include onion as part of the ingredients, maybe I will try it out next time.

The Best Way to Keep Cut Avocado Fresh

It doesn’t take too long to prepare the pesto, it is better to get the water boiling for the pasta to start with. Now, you can start preparing the pesto and put everything into a food processor and let it do the chop work. Put some parmesan cheese, parsley, basil, garlic, avocado, half lemon juice, good amount of olive oil, salt and pepper into the food processor and blend them into a pesto sauce. Super quick and easy!

When the hot water is ready, add a pinch of salt and cook the pasta according to the cooking time on the package. When the pasta is ready, drain them but save a bit of pasta water in case you need it later. Mix the pesto with the pasta and add some pasta water if you feel it’s too dry, then cut the smoked salmon into strips and mix them together with the pasta. Add the other half of lemon juice, and you can garnish it with some extra parsley and parmesan cheese on top.

CNY brunch – golden baked eggs

Happy Chinese New Year, today is the New Year’s Day, Kung Hei Fat Choy. We don’t have to go visit any relatives, so good to sleep in. Woke up a bit late, and let’s do a nice brunch for the two of us, something nice looking to start the Year of the Monkey.

I always want to bake eggs with the muffin tray, because they will look so nice and cute.  First of all, brush butter all around the tray inside, make sure nothing is going to get stuck there later on. Toast 2 pieces of bread, cut into 4 pieces and stuck each piece into the tray as a base, and brush some butter on each toast. Chop some ham into small pieces, place them on top of the toast, and put any kind of dip or sauce you like, for example mayonnaise, and I am using the avocado dip I’ve done last night. Then, cut the cherry tomatoes into four pieces, and place them into the tray. Finish it with an egg on top, nicely fill up the entire tray, and season each of them with salt and pepper.

Place the tray in the pre-heat oven under 180C for around 15 minutes, add some parmesan cheese on top 5 minutes prior done. When they are done, remove them slowly from the tray, and serve them on the plate or board. Garnish them with some arugula or spring onion and parmesan cheese, season them with some black pepper as well.

CNY’s Eve dinner . good to go for fish

  
Tonight is Chinese New Year’s Eve, I am thinking to cook a salmon dinner for the two of us. For the 團年飯 (Tuen Lin Fan), dinner for the whole family to get together, it’s an important dinner  during the year. Traditionally, we need to make sure we are having certain dishes for dinner, such as fish, shrimp and meat. Fish (魚 pronounce as yu), that represent good fortune and money, shrimp (蝦 pronounce as ha), that represent a lot of laughter and happiness. So, I guess for just the two of us, salmon is a good choice.

I would say, this dish is all about the avocado dip. That is not like guacamole, because that will be too strong for salmon, the trick for this one is with Greek yogurt. So, this dish is salmon and scallop with zucchini and cauliflower, served with avocado dip.

To get everything prepared before starting to cook. Cut the cauliflower in pieces and steam them until almost done, I will finish them later pan fry with butter and seasoning. Cut the zucchini in slices. Cut two avocados in half, and smash them into a large bowl. Then, add minced garlic, some Greek yogurt and a bit of lemon juice into it, and mix them well together. Season it with the amount of salt and pepper that you like. Now, heat the oven in 190C, place a foil and then salmon on the tray, season the salmon will salt and pepper, a bit of lemon juice and put some dill directly on the salmon. Drizzle some olive oil on the salmon and the tray, and put it in the oven and grill for 15 minutes. Turn the salmon upside down when it’s half way done, that helps to cook it more evenly. Sometimes I do prefer to grill the salmon with fully wrap of foil, in order to keep it moist. But today, I guess it’s fine to grill it just like that. 

When the salmon is in the oven, we can get the grill pan to fry the zucchini with olive oil. On the other hand, we can heat up another pan with butter, and fry the cauliflower, and season them with salt and pepper. Then, we heat the pan with butter, and fry the scallops. Please remember, do not overcook them, otherwise they will become too dry and chewy. Don’t forget to turn your salmon once in the middle. When the salmon is done, take them out and serve it with the scallop, some zucchini and cauliflower, of course with the avocado dip. The avocado dip tastes better if you have chance to let it chill in the fringe a little bit.

Just to make the entire family happy, I’ve also made some salmon with potatoes for our two doggies. Salmon is always good for dogs, this is actually what our vet asked is to feed one of our dog when she was having allergy. Good for skin and joint as well.
